From Birth to Steak – The Fascinating World of Bovine Traceability

Traceability in the cattle sector, once limited to basic ear tags for visual identification, has evolved into fully integrated birth-to-beef traceability systems, marking a profound transformation in global agri-food governance. However, the effectiveness of traceability systems is ultimately defined by financial implications and producer needs.

This transformation has been accelerated by disease outbreaks such as bovine spongiform encephalopathy (mad cow disease) and stricter import requirements in many countries. Today’s comprehensive traceability frameworks now link animal identity with movement, health, processing, and distribution data, serving both regulatory and commercial imperatives, as well as the desire to increase consumer confidence in traced products.

Multilayered architecture

Modern bovine traceability systems employ one, some or many of the following techniques, using a multilayered technology architecture: 

  • RFID – the universal standard for animal identity, used in nearly all national systems. While cheap and reliable, RFID alone does not, however, provide intelligence or full traceability.
  • IoT and sensors – enables real-time activity, health, and location monitoring, using accelerometers, temperature sensors, and GPS/LoRa devices.
  • Data platforms and cloud systems – centralised databases and interoperable systems facilitate movement tracking, compliance, and certification – turning identification into actionable traceability.
  • AI / advanced analytics – emerging use cases include disease prediction, weight estimation, behavioural analysis, supply chain optimisation, computer vision identification, and fraud detection. AI augments, rather than replaces RFID and database systems.
  • Blockchain – provides immutability and auditability, mainly used in premium and export certification contexts. Adoption at scale is limited by cost and complexity.
